A career to savor: 30 years in the flavor game

Careers Innovation Impact

As Director of Savory Application and Creation at dsm-firmenich, Holger is responsible for developing innovative flavoring solutions for some of the world’s best-known food products. Here, he shares what he loves about his work – and what he has learned from spending more than 30 years at the forefront of the industry.

“Combining our knowledge helps us gain a deeper understanding of how ingredients and flavors work together, and enables us to deliver broader, tastier innovations for customers. ”

Meeting changing consumer demands

I’ve witnessed a remarkable transformation in the three decades I’ve been working in savory flavor. Gone are the days when our work was simply about taste. Today, consumers demand more: natural ingredients, health-conscious options, and environmentally sustainable products. And at dsm-firmenich, we're not just meeting these expectations – we're pioneering solutions that are good for people and the planet.

One company like no other

The merger of dsm-firmenich created something truly special – a company with unparalleled expertise in both functional ingredients and flavor development. It is highly unusual to have both these strengths under one roof. Our CEO has said it puts us in a "category of one," and I couldn't agree more.

I get to see the benefits of our collaboration every single day. Combining our knowledge helps us gain a deeper understanding of how ingredients and flavors work together, and enables us to deliver broader, tastier innovations for customers.

Exploring the global palate

One of the most fascinating aspects of my work is exploring how flavor perception varies across cultures. Chicken soup is a perfect example. In Europe, it’s typically a slow-cooked dish with minimal seasoning. In Thailand, it’s a much spicier proposition. Even within Europe, there are differences in the way the chicken is cooked (roasted in some countries, boiled in others).

Understanding these regional differences is critical when you’re developing products for a global market. That’s why it’s so valuable to have a multinational, multicultural team, as we do here at dsm-firmenich. It’s also one of the most rewarding aspects of my job. Together, we’re creating flavors that tell a story, respect cultural traditions, and contribute to a healthier, more sustainable world.
